Description

This One Pot French Onion Pasta is a comforting and delicious dish that combines the rich, caramelized flavors of French onion soup with tender pasta and creamy cheese. Perfect for a cozy weeknight dinner, this recipe uses simple ingredients like yellow onions, garlic, herbs, and a mix of plant-based milk and cheeses to create a luscious, savory sauce all cooked in one pot for minimal cleanup.

Ingredients

Scale

Vegetables & Aromatics

  • 2 tbsp olive oil
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • Fresh thyme, for garnish (optional)

Seasonings

  • 1 tsp salt, divided
  • 1/2 tsp black pepper
  • 1 tbsp miso paste (optional)

Pasta & Liquids

  • 8 oz short-cut pasta (fusilli, rotini, or penne)
  • 2 cups vegetable broth
  • 1 cup water
  • 1/2 cup oat milk or any unsweetened plant milk

Cheeses

  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese or vegan alternative

Instructions

  1. Caramelize the onions: In a large heavy-bottomed pot, heat olive oil over medium heat. Add the thinly sliced onions along with 1/2 teaspoon of salt. Cook, stirring frequently, for 20 to 25 minutes until the onions are deeply golden and caramelized, releasing their natural sweetness.
  2. Deglaze and build flavor: Add the balsamic vinegar to the caramelized onions, stirring well and scraping up any brown bits from the bottom of the pot. Then stir in minced garlic, dried thyme, black pepper, and miso paste if using. Cook for about 1 minute until fragrant to deepen the flavor profile.
  3. Add pasta and liquids: Pour in the short-cut pasta, vegetable broth, and water. Stir to combine everything evenly. Bring the mixture to a gentle simmer, cover the pot, and cook for 10 to 12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.
  4. Make it creamy: Reduce the heat to low and stir in the oat milk along with shredded mozzarella and grated parmesan cheese. Continue cooking for 2 to 3 minutes, stirring consistently until the cheese melts completely and the sauce thickens to a creamy consistency.
  5. Garnish and serve: Taste and adjust seasoning as needed. Optionally garnish the pasta with fresh thyme. For an extra melty cheese topping, transfer the pasta to an oven-safe dish, sprinkle additional cheese on top, and broil for 2 to 3 minutes before serving warm.

Notes

  • Use a heavy-bottomed pot to prevent the onions from burning during caramelization.
  • If you prefer a vegan version, use vegan cheese alternatives and ensure your broth is vegetable-based.
  • Miso paste is optional but adds a rich umami depth to the dish.
  • Stir occasionally while cooking pasta to prevent sticking and ensure even cooking.
  • Serving suggestions: Pair with a simple green salad or crusty bread for a complete meal.
