Description

These Parmesan Garlic Broccoli Fritters are a delicious and healthy appetizer or side dish made from steamed broccoli mixed with a flavorful batter of parmesan, garlic, and egg. Crispy on the outside and tender inside, they are pan-fried to golden perfection and served with a tangy yoghurt and lemon sauce for a delightful bite.

Broccoli Fritters

  • 3 cups broccoli florets and stem, roughly chopped into 2cm/1 inch pieces (about 1 medium head of broccoli)
  • 2 tbsp oil (vegetable, olive oil, or canola)
  • 1 garlic clove, minced
  • 1/2 cup plain flour
  • 1/4 cup grated parmesan
  • 1 egg
  • 2 tbsp milk (low fat or full fat)
  • 1/2 tsp salt
  • Black pepper, to taste

Yoghurt Sauce

  • 1/4 cup plain yoghurt
  • 2 tsp lemon juice
  • Salt and pepper, to taste


Instructions

  1. Cook the broccoli: Steam or boil the broccoli florets and stems until they are tender but not mushy. This can be done by microwaving with a steamer for about 3 minutes on high.
  2. Prepare the broccoli: Use a potato masher to roughly mash the broccoli so it can be flattened easily during cooking. Avoid over-mashing to keep some texture.
  3. Make the yoghurt sauce: In a small bowl, combine plain yoghurt, lemon juice, salt, and pepper. Mix well and set aside.
  4. Mix the batter: Lightly beat the egg in a bowl using a fork. Add the flour, grated parmesan, minced garlic, milk, salt, and pepper. Stir until combined. The batter will be thick initially.
  5. Add broccoli to the batter: Fold the roughly mashed broccoli into the batter until evenly distributed. The broccoli will release some liquid, loosening the batter.
  6. Heat the oil: Warm 1 tablespoon of oil in a frying pan over medium heat.
  7. Form and cook fritters: Scoop approximately 1/4 cup of the batter and drop it into the pan. Gently flatten it to about 1 cm (1/3 inch) thick with a spoon. Cook 3 fritters at a time.
  8. Fry to golden brown: Cook the fritters for 2 to 3 minutes on each side until golden brown and cooked through. Repeat with the remaining batter, adding more oil as needed.
  9. Serve: Plate the fritters and serve warm with the prepared yoghurt sauce and extra lemon wedges if desired.
