These Parmesan Garlic Broccoli Fritters are a delicious and healthy appetizer or side dish made from steamed broccoli mixed with a flavorful batter of parmesan, garlic, and egg. Broccoli Fritters
- 3 cups broccoli florets and stem, roughly chopped into 2cm/1 inch pieces (about 1 medium head of broccoli)
- 2 tbsp oil (vegetable, olive oil, or canola)
- 1 garlic clove, minced
- 1/2 cup plain flour
- 1/4 cup grated parmesan
- 1 egg
- 2 tbsp milk (low fat or full fat)
- 1/2 tsp salt
- Black pepper, to taste
Yoghurt Sauce
- 1/4 cup plain yoghurt
- 2 tsp lemon juice
- Salt and pepper, to taste
Instructions
- Cook the broccoli: Steam or boil the broccoli florets and stems until they are tender but not mushy. This can be done by microwaving with a steamer for about 3 minutes on high.
- Prepare the broccoli: Use a potato masher to roughly mash the broccoli so it can be flattened easily during cooking. Avoid over-mashing to keep some texture.
- Make the yoghurt sauce: In a small bowl, combine plain yoghurt, lemon juice, salt, and pepper. Mix well and set aside.
- Mix the batter: Lightly beat the egg in a bowl using a fork. Add the flour, grated parmesan, minced garlic, milk, salt, and pepper. Stir until combined. The batter will be thick initially.
- Add broccoli to the batter: Fold the roughly mashed broccoli into the batter until evenly distributed. The broccoli will release some liquid, loosening the batter.
- Heat the oil: Warm 1 tablespoon of oil in a frying pan over medium heat.
- Form and cook fritters: Scoop approximately 1/4 cup of the batter and drop it into the pan. Gently flatten it to about 1 cm (1/3 inch) thick with a spoon. Cook 3 fritters at a time.
- Fry to golden brown: Cook the fritters for 2 to 3 minutes on each side until golden brown and cooked through. Repeat with the remaining batter, adding more oil as needed.
- Serve: Plate the fritters and serve warm with the prepared yoghurt sauce and extra lemon wedges if desired.

- Use both broccoli florets and stem for better texture and flavor.
