Banana Bites

  • 3 bananas, sliced into ½ inch thick rounds
  • ½ cup creamy peanut butter or allergy-safe nut-free butter

Chocolate Coating

  • 12 ounce package semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • Sprinkles (optional)


Instructions

  1. Prepare the base: Line a large cookie sheet with waxed paper to prevent sticking and make cleanup easier.
  2. Slice bananas: Peel the bananas and cut them into ½ inch thick rounds. Arrange the banana slices in a single layer on the waxed paper-lined cookie sheet.
  3. Add peanut butter: Place approximately 1 teaspoon of peanut butter on each banana slice. This doesn’t need to be perfectly measured or spread evenly. Optionally, add another banana slice on top to make a sandwich.
  4. Melt chocolate: In a microwave-safe bowl, heat the chocolate chips in 30-second increments, stirring in between, until fully melted. Stir in the coconut oil until well combined for a smooth chocolate coating.
  5. Dip banana bites: Using a fork, dip each peanut butter topped banana slice into the melted chocolate with the peanut butter side facing up.
  6. Remove excess chocolate: Lift the slice out of the chocolate and gently tap the fork on the side of the bowl to let excess chocolate drip off. Carefully slide the dipped banana bite back onto the waxed paper.
  7. Repeat the dipping: Continue dipping all the banana peanut butter bites into the chocolate. If desired, sprinkle colorful sprinkles over them before the chocolate sets.
  8. Chill to set: Place the cookie sheet with the chocolate-covered bites into the refrigerator and let them chill for at least one hour to harden.
