Description

A light and refreshing Pistachio Salad combining whipped topping, instant pistachio pudding mix, miniature marshmallows, and pineapple tidbits, garnished with chopped nuts. This no-cook dessert salad is sweet, creamy, and perfect for potlucks or family gatherings.

  • 1 package (3.4 ounces) instant pistachio pudding mix
  • 6 to 7 drops green food coloring (optional)
  • 3 cups miniature marshmallows
  • 1 can (20 ounces) pineapple tidbits, undrained
  • 1/2 cup chopped pistachios or walnuts
  • Additional whipped topping (optional, for garnish)


Instructions

  1. Combine whipped topping and pistachio pudding mix: In a large bowl, mix the entire carton of whipped topping with the package of instant pistachio pudding mix. If desired, add 6 to 7 drops of green food coloring to enhance the color. Fold gently until the mixture is smooth and evenly combined.
  2. Fold in marshmallows and pineapple: Carefully incorporate 3 cups of miniature marshmallows and the entire can of pineapple tidbits with their juice. Mix gently to combine without crushing the pineapple chunks.
  3. Chill the mixture: Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours. This allows the pudding salad to set and for flavors to blend harmoniously.
  4. Garnish and serve: Before serving, stir the salad lightly. Top with additional whipped topping if you like, then sprinkle with 1/2 cup chopped pistachios or walnuts to add crunch and nutty flavor.
