Description

  • 8 large flour tortillas

  • 1 cup shredded cheddar cheese
  • 1 cup sliced pepperoni

  • 1/2 cup chopped red onion
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. Prepare Filling: In a large bowl, mix mozzarella, cheddar, pepperoni, olives, bell pepper, and red onion. Add 1 cup of pizza sauce, oregano, garlic powder, and red pepper flakes if desired.
  3. Assemble Enchiladas: Spoon filling onto tortillas, roll tightly, and place seam-side down in the baking dish.
  4. Bake: Pour remaining sauce over enchiladas, top with extra cheese if desired, and bake for 20–25 minutes until heated through and bubbly.
