Scale
Wet Ingredients
- 1 cup (2 sticks) unsalted butter (softened to room temperature)
- 1 cup dark brown sugar (firmly packed)
- ½ cup white granulated sugar
- 2 large eggs (room temperature)
- 1 ½ teaspoons vanilla extract
Dry Ingredients
- 2 cups all-purpose flour
- ¾ teaspoon baking soda
- ¼ teaspoon salt
Add-ins
- 2 cups potato chips (coarsely broken; plain salted and wavy texture work best)
- 1 bar dark chocolate (coarsely chopped)
- 1 cup semi-sweet chocolate chips
Instructions
- Beat Butter: Add the softened butter to a mixing bowl and use a paddle attachment to beat the butter on medium speed until creamy and smooth.
- Add Sugars: Add the white and brown sugar to the butter and beat on medium speed for approximately 5 minutes, or until it’s smooth and fluffy.
- Add Eggs and Vanilla: Add the eggs and vanilla extract and beat on medium speed until fully combined, scraping down the bowl as needed to ensure even mixing.
- Incorporate Dry Ingredients: Add the flour, baking soda, and salt, mix on low to medium speed until just combined to avoid overmixing.
- Mix in Add-ins: Add the coarsely chopped dark chocolate, semi-sweet chocolate chips, and broken potato chips, mixing gently on low speed until evenly distributed throughout the dough.
- Chill Dough: Cover the dough and refrigerate for 30 minutes to firm up and enhance flavors.
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookies.
- Prepare Baking Sheet: Line a large baking sheet with parchment paper. Use a 1 ½ tablespoon cookie scoop to portion the dough into balls, placing them about 2 inches apart to allow space for spreading.
- Decorate Dough Balls: Press extra pieces of dark chocolate or potato chips on top of each dough ball if desired for extra texture and presentation.
- Bake: Bake the cookies for 12-14 minutes or until the edges are set and golden brown but the centers remain soft.
- Cool and Serve: Remove from oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
Notes
- Using wavy potato chips adds better texture and crunch compared to regular chips.
- Chilling the dough before baking helps the cookies hold their shape and improves flavor.
- Pressing extra potato chips or chocolate pieces on top before baking enhances the visual appeal and adds crispiness.
- Make sure butter and eggs are at room temperature to achieve the best dough consistency.
- Store cookies in an airtight container at room temperature for up to 5 days for freshness.
