Instructions
- Prepare the collard greens: Cut off the stems of the collard greens until approximately 8 inches of the leaf and stem remain. This prepares the leaves to be flexible and easy to roll.
- Trim the stems for easier rolling: At the cut ends of the collard greens, make V-shaped cuts removing an additional 1-2 inches of the stem area. This helps to avoid tough thick stems that can hinder wrapping.
- Layer the fillings: Just past the V-shaped cut, spread 1 tablespoon of hummus on each collard green leaf. Add 2 tablespoons of shredded carrots, 3-4 slices of yellow bell pepper, 2 tomato slices, 2 slices of red onion, 2 slices of avocado, and 1 basil leaf per wrap evenly.
- Season and roll: Sprinkle a pinch of salt and pepper over the layered ingredients. Carefully roll each collard green leaf tightly like a burrito, ensuring all fillings are enclosed. Place the wraps on a plate seam side down to secure.
