Description

This Rocky Road Candy Recipe combines creamy melted chocolate, peanut butter, crunchy nuts, and fluffy mini marshmallows to create delightful clusters of sweet, salty, and chewy goodness. Perfect as a no-bake treat for parties, gifts, or a quick homemade dessert.

Ingredients

Scale

Chocolate Mixture

  • 2 ½ cups milk chocolate chips (or semi-sweet/dark chocolate chips)
  • ¾ cup creamy peanut butter (optional)

Mix-ins

  • 2 ½ cups lightly salted peanuts (or nuts of choice: walnuts, almonds, pecans, macadamia nuts)
  • 2 ½ cups mini marshmallows

Others

  • 1 teaspoon coarse salt

Instructions

  1. Melt Chocolate and Peanut Butter: In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring well between each, until the mixture is fully melted and smooth.
  2. Combine Ingredients: In a large mixing bowl, add the peanuts, mini marshmallows, and coarse salt. Pour the melted chocolate and peanut butter mixture over the nuts and marshmallows, stirring gently until everything is evenly coated.
  3. Form Clusters: Line a baking sheet with parchment paper. Using a spoon, drop spoonfuls of the mixture onto the paper, forming clusters roughly the size of a walnut.
  4. Chill and Set: Place the baking sheet in the refrigerator for at least 1 hour to allow the clusters to firm up and set completely.
  5. Serve and Store: Once set, remove clusters from the refrigerator. Serve immediately or store in an airtight container in the fridge for up to 2 weeks.

Notes

  • The peanut butter is optional but adds a creamy texture and rich flavor.
  • Nuts can be substituted based on preference or dietary needs.
  • Don’t overheat chocolate to avoid burning; stir often while melting.
  • For a nut-free version, omit nuts and add extra marshmallows or seeds.
  • Clusters can be made smaller or larger depending on desired portion size.
