Description

This Rotisserie Chicken and Stuffing Casserole combines tender shredded rotisserie chicken with savory celery and onion, creamy soups, and classic Stove Top stuffing. Baked to golden perfection, it makes a comforting and easy weeknight meal or holiday side dish.

Ingredients

Scale

Stuffing

  • 1 package Stove Top stuffing mix (or more if desired)
  • 1 ½ cups water or chicken broth
  • ¼ cup butter
  • 3 stalks celery, diced
  • 1 onion, diced

Chicken and Sauce

  • 1 whole rotisserie chicken, cooked and shredded
  • 1 can cream of chicken soup
  • ½ can cream of mushroom soup
  • 8 ounces sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Prepare Stuffing: Bring the water or chicken broth to a boil. Once boiling, add the stuffing mix, remove from heat, cover, and let it sit to absorb the liquid. When ready, fluff the stuffing with a fork to separate the grains.
  3. Sauté Vegetables: In a skillet, melt the butter over medium heat. Add the diced onion and celery and cook until softened and fragrant, about 5 to 7 minutes. This step builds flavor for the casserole.
  4. Mix Soups and Sour Cream: In a bowl, combine the cream of chicken soup, cream of mushroom soup, and sour cream until completely smooth. This creamy mixture will bind the casserole ingredients together.
  5. Assemble Casserole: In the prepared baking dish, place the shredded rotisserie chicken evenly as the base layer. Top with the sautéed onion and celery, season with salt and pepper to taste. Spread the combined soup and sour cream mixture evenly over the top. Finally, layer the prepared stuffing mix on top as the finishing layer.
  6. Bake: Place the casserole in the preheated oven and bake for about 1 hour, or until the casserole is bubbly and the top is golden brown. Once done, allow it to cool slightly before serving to set the flavors and make it easier to cut and serve.

Notes

  • You can substitute chicken broth for water to enhance stuffing flavor.
  • Add herbs like thyme or parsley to the stuffing for extra aroma and taste.
  • Leftover rotisserie chicken works perfectly for this recipe, making it a great way to use up poultry.
  • For a crispy top, consider broiling for the last 2-3 minutes but watch carefully to prevent burning.
  • This casserole can be prepared a day ahead; assemble and refrigerate, then bake when ready.
