Dry Ingredients:
- 2 and 1/2 cups (313g) all-purpose flour
- 2 and 1/2 teaspoons baking powder
- 3/4 teaspoon salt
Wet Ingredients:
- 3/4 cup (170g) unsalted butter, softened to room temperature
- 1 and 3/4 cups (350g) granulated sugar
- 5 large egg whites, at room temperature
- 1/2 cup (120g) sour cream, at room temperature
- 1 tablespoon pure vanilla extract
- 1 cup (240ml) whole milk, at room temperature
- 2/3 cup (105g) rainbow sprinkles (not nonpareils)
Instructions
- Preheat oven and prepare pans: Preheat oven to 350°F (177°C) and grease three 9-inch round cake pans. Line the bottoms with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
- Prepare batter: In a large bowl, beat butter and sugar until creamy. Add egg whites, sour cream, and vanilla. Alternately add dry ingredients and milk, then fold in sprinkles.
- Bake: Divide batter between pans and bake for 23–26 minutes. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
Notes
- Use jimmies-style sprinkles to prevent bleeding.
- For a taller cake, bake in three 8-inch pans instead.
- Cake layers can be made a day ahead and stored tightly wrapped at room temperature.
