  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1/3 cup fresh basil leaves (chopped)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth or dry white wine (optional for extra flavor)


Instructions

  1. Heat the olive oil: In a large skillet over medium heat.
  2. Season and cook chicken: Season chicken with salt, pepper, and Italian seasoning. Cook for 5–6 minutes per side until golden brown and cooked through.
  3. Cook tomatoes: Sauté garlic, add tomatoes, and cook until soft.
  4. Deglaze and finish: Deglaze with broth or wine, return chicken, top with tomato mixture, basil, and cheese. Simmer for 2 minutes.
