Ingredients
Scale
Filling
- 2 cups cooked shredded chicken (rotisserie works well)
- 1 cup cooked rice (white, brown, or Mexican-style)
- 1 cup black beans, rinsed and drained
- 1 cup shredded cheddar or Monterey Jack cheese (divided)
- 1/2 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 6 large flour tortillas
Sauce and Topping
- 1 cup red enchilada sauce
- 1/2 cup sour cream
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a large baking dish to prevent sticking and help with even cooking.
- Mix Filling Ingredients: In a large bowl, combine the shredded chicken, cooked rice, black beans, half of the shredded cheese, salsa, chili powder, cumin, salt, and pepper. Mix thoroughly to ensure all flavors are evenly distributed.
- Assemble Burritos: Lay out the flour tortillas and evenly distribute the filling among them. Roll each tortilla tightly and place them seam-side down in the prepared baking dish to keep them sealed while baking.
- Prepare Sauce Mixture: In a small bowl, blend together the red enchilada sauce and sour cream until smooth. Pour this creamy sauce mixture evenly over the assembled burritos in the baking dish.
- Add Cheese and Cover: Sprinkle the remaining shredded cheese on top of the sauced burritos. Cover the baking dish with foil to keep moisture in and bake for 20 minutes.
- Bake Uncovered: Remove the foil and continue baking for another 10 minutes, or until the cheese is bubbly and golden brown, indicating that the burritos are hot and fully cooked.
- Garnish and Serve: Optionally sprinkle chopped cilantro over the top before serving to add freshness and a pop of color.
Notes
- Rotisserie chicken is an easy shortcut for quick preparation.
- You can substitute black beans with pinto beans if preferred.
- For a spicier version, add diced jalapeños or hot sauce to the filling.
- Use whole wheat tortillas for a healthier option.
- Leftover burritos can be stored in the refrigerator for up to 3 days and reheated in the oven.
