Delight in the rich, buttery sweetness of Southern Pecan Pralines, a classic Southern confection featuring caramelized brown sugar, cream, and crunchy pecan halves. These creamy, melt-in-your-mouth pralines are easy to make and perfect for gifting or indulging.
Ingredients
Scale
Praline Mixture
- 1 cup light brown sugar (packed)
- 1/3 cup whipping cream
- 1/4 cup unsalted butter (1/2 stick)
- Pinch salt
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups pecan halves
Instructions
- Prepare Baking Sheet: Line a large baking sheet with parchment paper and set it aside to prevent sticking when dropping the praline mixture.
- Combine Ingredients: In a medium saucepan, combine the brown sugar, butter, pinch of salt, and whipping cream. Place over medium heat.
- Bring to Boil: Stir the mixture frequently until it comes to a full, rolling boil that continues bubbling even while stirring.
- Boil Unstirred: Once boiling, allow the mixture to boil vigorously without stirring for exactly one minute to develop the proper consistency.
- Remove from Heat and Add Powdered Sugar: Take the pan off the heat and quickly whisk in the powdered sugar until the mixture becomes smooth and creamy.
- Add Vanilla and Pecans: Stir in the vanilla extract and pecan halves until they are evenly incorporated into the praline batter.
- Cool Slightly: Let the mixture cool for about a minute to thicken slightly but remain pliable. Stay attentive as the mixture sets quickly.
- Drop Pralines: Using a cookie scoop or tablespoon, drop spoonfuls of the mixture onto the prepared parchment-lined baking sheet.
- Set and Serve: Allow the pralines to cool completely and set at room temperature before serving or packaging.
Notes
- Use fresh pecans for the best flavor and crunch.
- Do not stir during the one-minute boil to ensure correct texture.
- Work quickly when whisking in powdered sugar to avoid lumps.
- If pralines do not set, allow additional cooling time or refrigerate briefly.
- Store pralines in an airtight container at room temperature for up to a week.
