For the chicken filling:

  • 1 pound ground chicken
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 red bell pepper, diced
  • 1 medium carrot, shredded
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha sauce
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup chopped water chestnuts
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped

For serving:

  • 1 head butter lettuce leaves, separated and washed
  • Lime wedges for serving

Instructions

  1. Prepare the chicken filling: Heat sesame oil in a large skillet over medium heat. Add garlic, onion, and ginger, and sauté until fragrant, about 2 minutes. Add ground chicken and cook until browned and cooked through, breaking it apart with a spoon.
  2. Add vegetables: Stir in bell pepper, carrot, and water chestnuts, and cook for another 3 minutes until vegetables are tender-crisp.
  3. Season the filling: Add hoisin sauce, soy sauce, rice vinegar, sriracha, and crushed red pepper flakes. Stir well and simmer for 2 minutes to allow flavors to blend.
  4. Finish and serve: Remove from heat and stir in green onions and cilantro. Spoon chicken mixture into lettuce leaves, serve with lime wedges, and enjoy immediately.

Notes

  • For extra spice, add more sriracha or red pepper flakes.
  • You can substitute ground turkey for chicken if preferred.
  • To make it gluten-free, use tamari instead of soy sauce and a gluten-free hoisin sauce.
