For the chicken filling:
- 1 pound ground chicken
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 small onion, finely diced
- 1 red bell pepper, diced
- 1 medium carrot, shredded
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha sauce
- 1 teaspoon fresh ginger, grated
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup chopped water chestnuts
- 2 green onions, sliced
- 1/4 cup fresh cilantro, chopped
For serving:
- 1 head butter lettuce leaves, separated and washed
- Lime wedges for serving
Instructions
- Prepare the chicken filling: Heat sesame oil in a large skillet over medium heat. Add garlic, onion, and ginger, and sauté until fragrant, about 2 minutes. Add ground chicken and cook until browned and cooked through, breaking it apart with a spoon.
- Add vegetables: Stir in bell pepper, carrot, and water chestnuts, and cook for another 3 minutes until vegetables are tender-crisp.
- Season the filling: Add hoisin sauce, soy sauce, rice vinegar, sriracha, and crushed red pepper flakes. Stir well and simmer for 2 minutes to allow flavors to blend.
- Finish and serve: Remove from heat and stir in green onions and cilantro. Spoon chicken mixture into lettuce leaves, serve with lime wedges, and enjoy immediately.
Notes
- For extra spice, add more sriracha or red pepper flakes.
- You can substitute ground turkey for chicken if preferred.
- To make it gluten-free, use tamari instead of soy sauce and a gluten-free hoisin sauce.
