Strawberry Mixture

  • 1 Tbsp granulated sugar

Coating

  • 3/4 cup graham cracker crumbs


Instructions

  1. Beat Cream Cheese and Sugar: Using a hand mixer, beat the softened cream cheese until smooth and creamy. Add in the 4 tablespoons of granulated sugar and continue mixing until well combined.
  2. Add Remaining Ingredients: Stir in the powdered sugar, sour cream, and vanilla extract. Mix until the mixture is smooth and uniform. In a separate small bowl, mix the finely diced strawberries with 1 tablespoon of granulated sugar and let it sit briefly to macerate.
  3. Fold in Strawberries: Gently fold the sugared strawberries into the cheesecake mixture to evenly distribute the fruit without breaking it down too much. Transfer this mixture into a container and freeze for at least 6 hours or overnight to firm up.
  4. Form Bites: Once frozen, remove the mixture and let it soften for about 20 minutes at room temperature. Scoop out 1/8 cup portions and roll each into smooth balls with your hands. Keep the balls in the freezer as you work to maintain firmness.
  5. Coat with Graham Crackers: Pour the graham cracker crumbs onto a plate. Remove the cheesecake balls from the freezer in small batches, then thoroughly roll each one in the crumbs to coat completely. Place coated bites back into a container and freeze until ready to serve.
