Description

  • 16 oz. cream cheese (softened)
  • 4 Tbsp granulated sugar
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup sour cream

Strawberry Mixture

  • 3/4 cup strawberries (finely diced)
  • 1 Tbsp granulated sugar

Coating

  • 3/4 cup graham cracker crumbs


Instructions

  1. Beat the Cream Cheese and Sugar: Using a hand mixer, beat the softened cream cheese until smooth. Gradually mix in 4 tablespoons of granulated sugar until fully combined.
  2. Add Remaining Ingredients: Stir in the powdered sugar, sour cream, and vanilla extract until the mixture is smooth and well-blended. In a separate small bowl, combine the finely diced strawberries with 1 tablespoon of sugar and let them macerate slightly.
  3. Fold in Strawberries & Freeze: Gently fold the sugared diced strawberries into the cheesecake mixture. Transfer the mixture to a container and freeze for 6 hours or overnight. When ready, remove from the freezer and let it sit at room temperature for about 20 minutes to soften slightly for easier handling.
  4. Form Cheesecake Balls: Scoop out 1/8 cup portions of the mixture, roll them between your hands to form balls, and place them on a tray. Freeze the balls in batches as you prepare them to maintain firmness.
  5. Coat with Graham Cracker Crumbs: Coat each cheesecake ball thoroughly with graham cracker crumbs by rolling them on a plate filled with crumbs. Arrange coated balls in a container and return them to the freezer until serving.
