Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the fruit filling: In a large bowl, combine peaches, blueberries, lemon juice, 1/2 cup sugar, and cornstarch. Pour into a 9-inch baking dish.
  3. Make the cobbler topping: In a separate bowl, mix flour, 1/4 cup sugar, baking powder, and salt. Cut in the butter until crumbly. Stir in milk and vanilla.
  4. Assemble and bake: Drop spoonfuls of the batter over the fruit. Sprinkle with coarse sugar. Bake for 35–40 minutes until golden and bubbly. Let cool slightly before serving.
