Ingredients
Scale
Rice
- 1 cup white rice
- 2 cups water
Ground Beef
- 1 pound ground beef
- 1 packet taco seasoning
Toppings
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup sliced black olives
- 1/4 cup chopped cilantro
- 2 cups crushed Doritos
- 1/2 cup sour cream
- 1/4 cup salsa
Instructions
- Rinse the rice: Rinse 1 cup of white rice under cold water in a fine-mesh strainer to remove excess starch for fluffier cooked rice.
- Cook the rice: In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil over high heat.
- Simmer the rice: Once boiling, reduce heat to low, cover the saucepan with a lid, and let it simmer gently for 18-20 minutes until water is absorbed and rice is tender.
- Let rice rest: Remove the saucepan from heat and keep it covered, allowing the rice to steam for an additional 5 minutes to finish cooking.
- Cook the ground beef: While the rice cooks, heat a skillet over medium-high heat and cook 1 pound of ground beef, stirring occasionally, until browned and fully cooked through.
- Season the beef: Add 1 packet of taco seasoning to the cooked ground beef. Stir well to coat the meat evenly with the seasoning.
- Prepare toppings: Shred 1 cup of cheddar cheese. Dice 1/2 cup tomatoes and 1/4 cup red onion. Slice 1/4 cup black olives. Chop 1/4 cup fresh cilantro for garnish.
- Crush Doritos: Place 2 cups of Doritos in a resealable plastic bag and crush them using a rolling pin or the back of a spoon until you have coarse crumbs for topping.
- Assemble bowls: Divide the cooked rice evenly among serving bowls.
- Add seasoned beef: Top the rice in each bowl with a portion of the seasoned ground beef.
- Add toppings: Sprinkle shredded cheddar cheese, diced tomatoes, red onion, black olives, and chopped cilantro over the beef and rice.
- Add Doritos: Generously sprinkle the crushed Doritos over the top for a crunchy texture contrast.
- Finish with sour cream and salsa: Add a dollop of sour cream and a spoonful of salsa to each bowl to enhance flavors.
- Serve: Serve the taco rice bowls immediately while warm and enjoy the combination of textures and flavors.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- Use your favorite flavor of Doritos for a different twist.
- Fresh lime juice added to the salsa can brighten the flavor.
- For extra heat, add jalapeño slices or hot sauce as a topping.
- Leftovers can be refrigerated and reheated, but the Doritos topping is best added fresh to maintain crunch.
