- Combine egg whites and wet ingredients: Gently fold the beaten egg whites into the wet ingredients using a rubber spatula to maintain their airy texture.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay. Allow the batter to rest for 20 to 30 minutes to develop flavor and improve texture.
- Cook pancakes: Preheat a griddle or skillet over medium-high heat, aiming for 400-420°F. Using a heaping 1/4 cup of batter per pancake, pour onto the hot surface.
