- 2 pounds extra lean ground turkey
- 1 (28 fluid ounce) can diced tomatoes with juices
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/4 teaspoon dried oregano
- 4 cloves garlic, minced
- 2 (4 fluid ounce) cans diced green chilies
- 2 (14 fluid ounce) cans white kidney (cannellini) beans, drained
- 1/2 cup sour cream

Instructions
- Prep Ingredients and Sauté Onion: Heat olive oil in a large pot over medium-high heat. Add the chopped onion and sauté for about 5 minutes until softened and translucent.
- Cook Ground Turkey: Add the extra lean ground turkey to the pot. Cook, stirring and breaking it up with a spoon, until the turkey is fully cooked and turns white, about 5 minutes.
- Add Tomatoes and Spices: Stir in the diced tomatoes with their juices, chili powder, cumin, smoked paprika, dried oregano, minced garlic, diced green chilies, and the drained white kidney beans. Mix well to combine all the ingredients.
- Simmer the Chili: Bring the mixture to a gentle boil, then reduce the heat to low to maintain a slow simmer. Let it cook uncovered for 15 to 20 minutes, stirring occasionally to prevent sticking and allow flavors to meld.
- Finish with Sour Cream and Season: Remove the pot from heat and stir in the sour cream. Season the chili with salt and pepper to taste. Serve immediately, topped with your choice of shredded cheese, avocado, tortilla strips, cilantro, or additional sour cream.
