Description

These White Cheddar Stuffed Mushrooms are a delicious and savory appetizer featuring large white button mushrooms filled with a creamy mixture of white cheddar, cream cheese, fresh parsley, and seasoned with garlic and onion. Baked until golden brown, they offer a perfect blend of textures and rich flavors ideal for entertaining or a tasty snack.

Ingredients

Scale

Mushrooms

  • 24 large white button mushrooms, stems removed

Filling

  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 cup white cheddar cheese, shredded
  • 4 oz (115g) cream cheese, softened
  • ¼ cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Prepare the Mushrooms: Preheat the oven to 375°F (190°C). Clean the mushrooms with a damp cloth and carefully remove the stems. Set aside the mushroom caps and finely chop the stems for the filling.
  2. Cook the Filling: Heat olive oil in a skillet over medium heat. Add the chopped mushroom stems and diced onion and cook for 4-5 minutes until softened. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
  3. Mix the Filling: In a mixing bowl, combine the cooked mushroom mixture with shredded white cheddar cheese, softened cream cheese, breadcrumbs, chopped parsley, salt, and black pepper. Stir thoroughly until all ingredients are well incorporated into a creamy filling.
  4. Stuff the Mushrooms: Arrange the mushroom caps on a baking sheet. Spoon the prepared filling generously into each mushroom cap, ensuring they are well packed. Optionally, sprinkle the tops with grated Parmesan cheese for extra flavor and a crispy topping.
  5. Bake the Mushrooms: Place the baking sheet in the preheated oven and bake for 18-20 minutes or until the mushrooms are tender and the tops are golden brown, indicating they are cooked through.
  6. Serve: Remove the stuffed mushrooms from the oven and let them cool for a few minutes. Garnish with additional fresh parsley if desired, and serve warm as a delightful appetizer or snack.

Notes

  • Be sure to finely chop the mushroom stems to ensure a uniform filling texture.
  • If you prefer a gluten-free version, substitute the breadcrumbs with gluten-free breadcrumbs or crushed nuts.
  • The optional Parmesan cheese topping adds a nice golden crust but can be omitted for a milder flavor.
  • These stuffed mushrooms can be prepared ahead of time and baked just before serving for convenience.
  • Adjust seasoning to taste, especially if using salted cheeses.
